Take a moment to familiarize yourself with the guidelines below (choose the style that you have been asked to use in your course):

APA Style: Racial & Ethnic Identify

Chicago Manual of Style: 8.38: Ethnic, national, and regional groups and associated adjectives

MLA Style Center: Are names of groups like African American and Native American ever hyphened in MLA style?

If you do not see the information that you need, try Googling terms like inclusive language.  There are a number of excellent guides to choose from, such as the OHSU Inclusive Language Guide (PDF file).  Be sure that you rely on guidelines from credible sites (.edu and .gov websites are usually safe choices).
